Gardening in gorgeous weather

I am sitting outside in our backyard upstate as I write this. It has been a glorious weekend, weather wise. Just spectacular!!

I should be riding my bike right now, but my body hurts too much from all the gardening yesterday. What happened? Gardening reaches muscles you forgot about for a year, even if you work out regularly, as I do. Honest. My father used to say, “It’s tough to get old, Mare.”

How right he was.Herb garden in early May, upstate New York, Columbia County.

So here is my herb garden. I was so excited to see that my Italian parsley made it through the winter, as it’s an annual. Even my English thyme looks like it’s coming back. The chives, sage, mint, sorrel, and oregano are all in good shape. I planted sweet basil and some lettuces and weeded everything else.Tomatoes and nasturium plants waiting to be planted.

And here are my tomatoes and nasturtiums. Yet to buy – tarragon, rosemary and arugula – next weekend.

Now I have to put covers on them before heading back to the city as it still gets really cold here at night.

Father’s Day!

Hope all you Dads out there had a great day!! Because our youngest left on Friday for a seven week vacation in Poland and Eastern Europe, our Father’s Day came early. They surprised my husband on Thursday evening, He came home from work to a beautifully set dining room table and both boys busy in the kitchen. I made cocktails for all and we had a grand time.

Here’s what they made. They started with a salad of arugula, topped with thinly sliced radishes and carrots, followed with avocado and a white wine and olive oil vinagrette. The meal was scaloppini of veal poached in a homemade vegetable broth with tarragon, dill and parsley, (a Mark Bittman recipe), served over parboiled broccoli rabe that was then flash broiled, and finished with a tossing of olive oil and chopped garlic, with mandoline sliced potatoes, coated in clarified butter and baked, (a French Laundry recipe). I am not making this up. They did it all and it was amazing and delicious!!!

Waiting for a bike ride

While waiting for the rain to stop and the sun to come out in order to take a bike ride today, I went out and cut some arugula (It grows so fast) and whipped up this dressing for a little salad. It doesn’t get any better than this – so fresh, so clean, so delicious!

I love anchovies. They’re packed with flavor and I remember making a creamy salad dressing years ago for an arugula salad and for the life of me I cannot remember where I got that recipe or what, exactly, was in it. I searched everywhere I could think of, with no luck. So I made this one up and it’s terrific, although not yellow in color like the one I remember. This one looks like a pretty green goddess dressing because of the parsley.

Now if you don’t have a mini chopper and grinder from Cuisinart, go get one. Bed Bath and Beyond will special order it for you. They’re only about $20.00 and they are the best little tool. I use it to make this dressing or grind spices for a spice rub. It’s the best!

LEMON ANCHOVY DRESSING
2 tbs. fresh Italian parsley leaves
2 tbs. fresh lemon juice
2 tsp. Dijon mustard
3 garlic cloves, roughly chopped
3 anchovy fillets, patted dry of oil in a paper towel
3 tbs. olive oil

Combine everything except the olive oil in a mini processor or grinder and process until smooth. Add oil 1 tbs. at a time and process after each addition until thoroughly combined and smooth.

Enjoy!! I gotta get on my bike!

The Best Potato Salad

The Best Potato Salad with fennel, Parmesan cheese, cipollini onions and picholine olives.

The first time I made this was one year ago. Our oldest son was having a party at his apartment where they also have use of the roof. We were invited – unusual for parents! I brought a quadrupled recipe of this along with a rhubarb upside down cake. Both were huge hits!! This potato salad recipe is unusual, surprising and so very tasty. You will love it! This is an adapted version of a Martha Stewart recipe. (Robin – this is for you!)

THE BEST POTATO SALAD – serves 6

3 tablespoons extra-virgin olive oil
4 garlic cloves, thinly sliced
1 1/2 pounds baby Yukon Gold potatoes, scrubbed and halved
3/4 pound cipollini onions, peeled (drop in boiling water for 1-2 minutes to make this easier)
1/8 teaspoon red-pepper flakes
1 cup homemade or store-bought low-sodium chicken stock
Coarse salt and freshly ground pepper
1 tablespoon plus 1 teaspoon white-wine vinegar
1/2 cup picholine olives, pitted (2 1/2 ounces)
1 small fennel bulb, very thinly sliced (use a mandoline)
1/2 cup fresh flat-leaf parsley
1 ounce Parmesan cheese, shaved (1 cup)

Heat a medium skillet over medium-low heat with oil. Add garlic, and slowly saute for 8 – 10 minutes, stirring frequently. Turn heat to medium-high and add potatoes, onions, and red-pepper flakes. Cook until onions are golden, about 7 minutes.

Add stock, and season with salt and pepper. Bring to a simmer, cover, and cook until potatoes and onions are tender, about 10 minutes. Remove potatoes and onions with a slotted spoon. Reserve 1/2 cup cooking liquid.

Combine reserved liquid, vinegar, 1/2 teaspoon salt, and pepper. Pour over warm potatoes and onions. You must do this while the potatoes are still warm to ensure maximum flavor. Stir in olives, and let cool completely.

Add fennel and parsley, and combine. Season with salt and pepper. Top with Parmesan.

Take a look at my garden after I took off the “winter blankets” yesterday. My mint, oregano, sage and chives went wild!

Mother’s Day!

It is my all-time favorite holiday. I get to feel like a queen and do whatever I want for the day and my boys and husband are just the BEST!

This past Sunday I woke up to a dining room table set for four, which meant that my oldest son was even joining us for brunch! The younger one made fabulous waffles from scratch, with maple syrup from upstate New York, thanks to our friend Mary Beth who was just over for dinner and brought it as a gift! The meal was complete with artisanal sausage and tea.

And now dinner was amazing. They had asked me what I wanted and I said, “Surprise me!”

They started with a baby arugula salad with roasted beets, toasted walnuts and English Stilton. Yum! The main course was swordfish steaks, stuffed with a parsley, anchovy, caper, pesto sauce and topped with it too (a Mark Bittman recipe) and a quinoa vegetable dish that the younger one made up and promises to share. Dessert was vanilla ice cream with sauteed figs in butter with a vanilla bean, plus my husband supplied some fantastic chocolate truffles. But the boys did everything! I could truly taste the LOVE – everything was scrumptious! I am very lucky.

And then dessert was followed by gifts! A totally fantastic day!

We did it!!

We moved our offices on Thursday. Two trucks and 400 boxes later, we are in our new space in TriBeCa. We finished at 2:30 am on Friday morning. It’s going to be great but right now, my hands hurt so much I’ve been coating them with hand cream followed by a thick coating of Vaseline, and wearing an old pair of my Aunt Lu’s white gloves from the 50’s to sleep in. (Not exactly sexy since I also like to wear a pair of white socks because my feet get so cold – oh well!) My Mom always said that this was the best bet to treat badly damaged hands AND keep your sheets clean. Only now I think I’m going to have to start with some Neosporin on the cuticles first, then the rest of the program.

It is truly amazing how much stuff you can amass in 10 years, particularly in my business with all the printed samples we must have on hand to show to new prospective clients. And I did a lot of editing and throwing away before the movers came and we still have so much stuff.

So we were back in the office again today, working on the unpacking and arrived home at 6:30, starving, as we had no lunch. As I mentioned before, my husband has to be on this crazy diet of no garlic, onions, tomatoes, spicy things, or lemons.

So I wanted to make a shrimp and pasta dish and I’m thinking, what can I do here? It’s easy to make a shrimp and pasta dish with garlic and tomatoes. A little shallot wouldn’t hurt either, or lemon and garlic with white wine, but this! He can have ginger, so I’m considering it but then it’s just not sounding good to me.

So I sent him out to get some parsley (we fortunately have a grocery store right downstairs in our building) and this is what I came up with – and it was crazy delicious!! Simple, quick, clean tasting and it seemed to have a creamy lemony taste, which I’m not sure where that came from – maybe a residual taste from the Sauvignon? Try this and tell me what you think.
Pasta with shrimp, olive oil, parsley and white wine

QUICK, EASY PASTA WITH SHRIMP – AND NO GARLIC
– serves 4

1.5 lbs. large shrimp, shelled and deveined
1 lb. spaghetti #3
1/3 cup olive oil plus more for finishing
1 cup chopped fresh parsley, washed and air dried before chopping
1/2 cup dry white wine
Salt
Pepper
3 – 4 tbs pasta water

Put a large pot of salted water on to boil for the pasta. Thoroughly wash and pat dry the shrimp. Salt and pepper one side.

Heat the olive oil until very hot. Add the parsley carefully – it will pop and really sizzle because of the water in it hitting the oil. Stir and let it sizzle for 30 seconds to a minute and then add the shrimp and turn heat down slightly. Cook shrimp 1-2 minutes, add the wine and make sure it is bubbling. Turn the shrimp and cook another 1–2 minutes. When shrimp are pink on both sides, turn off heat but leave in pan.

Meanwhile, you should be cooking your pasta till al dente. Save some pasta water and drain.

In a large bowl layer in half of the pasta and half of the shrimp mixture. Repeat the layers. Drizzle on some additional oil and the pasta water. Toss and combine well. Serve and enjoy!

Remember, it’s always about the quality of ingredients you use. Find the freshest shrimp, the best olive oil, use French grey salt and Tellicherry fresh ground pepper for best results.
