Potato Salad Winner Announced!!

Soon after Memorial Day, we set out to find the best potato salad recipe we could before the next big picnic holiday – the Fourth of July – this week! So I asked for my readers’ favorite recipes and had almost too many to choose from, in the best way. The submissions were about as varied as possible, and I recruited my team to vote for the top three.

Those top three were: the decadent and complex Salat Olivier from Misha, the bread-and-butter-pickle-sweetened Mom’s Potato Salad from Nicky, and Aunt Rose’s Potato Salad with anchovies from Nikki. Thank you to everyone who submitted a recipe. They were, quite frankly, all good!

Our team chose the last one as the big winner. It’s simple but really delicious, verging on a “classic” non-mayo potato salad recipe. It is a neat trick to take out the cooked egg yolks and combine them with the olive oil and herbs. That makes a kind of homemade, safe (because the yolks are cooked) mayonnaise. The anchovies give it that boost of flavor. (and you know I LOVE anchovies) It’s possible that people who are turned off by the idea of anchovies will still enjoy this recipe because there’s only one – but to be honest, I would add even more anchovies (3.5) and chives (1 tbs.).

AUNT ROSE’S EGG AND POTATO SALAD RECIPE – serves 4

1. Boil 1 pound of yellow new potatoes in their skins. Peel and chill.
2. Hard boil 4 eggs. Peel and chill.

Dressing:
1. In a bowl put 1 tsp. salt and 1/4 tsp. fresh ground pepper.
2. Add 2 tbsp. red wine vinegar, 5 tbsp. light olive oil, 1 tsp. chopped chervil, 1 tsp. chopped chives, and 1 anchovy fillet, minced.

Remove yolks from the hard boiled eggs and crumble into dressing. Whisk to combine. Cut egg whites into pieces. Cut the potatoes into thin slices.

Fold everything together, mix well and serve chilled. It’s simple and very good! Yum!

Gardening in gorgeous weather

I am sitting outside in our backyard upstate as I write this. It has been a glorious weekend, weather wise. Just spectacular!!

I should be riding my bike right now, but my body hurts too much from all the gardening yesterday. What happened? Gardening reaches muscles you forgot about for a year, even if you work out regularly, as I do. Honest. My father used to say, “It’s tough to get old, Mare.”

How right he was.Herb garden in early May, upstate New York, Columbia County.

So here is my herb garden. I was so excited to see that my Italian parsley made it through the winter, as it’s an annual. Even my English thyme looks like it’s coming back. The chives, sage, mint, sorrel, and oregano are all in good shape. I planted sweet basil and some lettuces and weeded everything else.Tomatoes and nasturium plants waiting to be planted.

And here are my tomatoes and nasturtiums. Yet to buy – tarragon, rosemary and arugula – next weekend.

Now I have to put covers on them before heading back to the city as it still gets really cold here at night.

Creamy, dreamy…

…parsnips!! Yes, parsnips! Who would have thunk it? This dish, in the newest October Food and Wine magazine, appealed to me. I had parsnips and I had chicken thighs. I always have white wine that can be used up. If not that, use dry vermouth and feel very French. And the rest of the recipe I just improvised and changed.

Yesterday, my day was challenging. Our refrigerator and freezer went kaput in the middle of the night and I had to work from home while waiting for the repair men to come. Meanwhile I had the bright idea to call the super and ask if there were any empty apartments that had a refrigerator and could I please store all my food there? Yes, there was one on the third floor. Bingo! So here I am, hauling bags of food down there and then I’m trying to work at our kitchen counter and our darn refrigerator keeps on beeping to tell me that the temperature is below where it should be. Duhhh!!! Do you know how annoying that is?

Meanwhile, I’m dealing with two very inexperienced clients and I am frustrated. After the repair guys finally fix the refrigerator, I had to go to the Bronx for a meeting with the new board president at the school I volunteer at and I am not in a pretty mood. I tell them what I really think about their name at this meeting and leave. I am nice about it but firm.

I get back home and decide I need to sweat all this meanness out so I go to the gym and ride a bike for over 5 miles and come back up to cook this dinner which was so delicious and creamy dreamy that I am now a nice person again.

You see how food has the ability to comfort and soothe, curing all that ails you? When you cook with love, you only magnify that tenet.

Parsnips are in season now. Buy only fresh young ones — no big fat woody ones allowed! This really is a must-make dish. We served a Vouvray and some steamed Jasmine rice with this and all was well and back to normal in our household!

CHENIN BLANC BRAISED CHICKEN THIGHS WITH PARSNIPS AND SAGE
– serves 4

2 tbs. unsalted butter
2 tbs.extra-virgin olive oil
8 medium chicken thighs, with bones and skin
Salt
Freshly ground black pepper
1/2 cup all-purpose flour
4 large shallots, peeled and quartered
1 lb. parsnips, peeled and cut into 3″ lengths and then quartered or halved
1 large sage sprig with numerous leaves
1 cup Chenin Blanc or other dry white wine
2 cups low-sodium chicken broth, preferably homemade
Chopped fresh sage leaves and chives for garnish

Preheat the oven to 425 degrees. In a large, deep ovenproof skillet, melt the butter in the oil. Season the chicken with salt and pepper and dust lightly with the flour, tapping off the excess. Add the chicken to the skillet skin side down and cook over high heat, turning once, until browned, 6 minutes. Transfer to a plate.

Add the shallots, parsnips and sage sprig to the skillet and cook, stirring, for 1 minute. Add the wine and boil until reduced by half, about 3 minutes. Add the broth and bring to a boil. Nestle the chicken skin side up in the skillet, tucking it between the parsnips. Transfer the skillet to the middle rack of the oven and braise the chicken uncovered for about 25 minutes, until cooked through.

Turn the broiler on. Broil the chicken for 3 minutes, until the skin is crisp. Return the skillet to high heat and boil until the sauce is thickened, 3 minutes. Discard the sage sprig, if you like. Transfer the chicken and vegetables to bowls, garnish with chopped sage leaves and chives and serve with steamed Jasmine rice.

An early summer delight!

It’s the season for soft shell crabs, a personal favorite of mine. After a true Seinfeld episode with Felix from the fish store calling numerous times and yelling at me, I finally got my order delivered. I have to say, it was worth the abuse.

What I did was so stupid simple and so very good, my husband is still talking about them today. That’s the sign of a really good meal – the memorable factor!

Here’s what I did.

SOFT SHELL CRABS
– serves 2

4 cleaned, washed and dried soft shell crabs
Organic buttermilk to cover the crabs
2 tbs. canola oil
1.5 tbs. unsalted butter
Flour to lightly dredge in on a flat plate
Fresh snipped chives to garnish
Lemon wedges

Have your fishmonger clean your crabs before you bring them home. (Put up with the abuse.) Place crabs in a narrow deep bowl to stack them and cover with buttermilk and let them sit for 15-25minutes, turning them once in the middle of the time. Heat the oil until very hot and add the butter. When the butter foam subsides, lift a crab out to drain the buttermilk and dredge lightly in the flour to cover and place in the hot pan. Once all the crabs are in, place a heavier, preferable cast iron skillet, on top of them to weight them down and cook for 3 minutes. Remove the top skillet and turn the crabs over and cook for another 3 minutes, no weight on top this time.

Lift them from the pan, sprinkle chopped chives on top and serve with fresh lemon wedges.

Delish!!! (Notice they didn’t even need any salt or pepper – I think the organic buttermilk was important and of course the quality of the crabs.)

The Best Potato Salad

The Best Potato Salad with fennel, Parmesan cheese, cipollini onions and picholine olives.

The first time I made this was one year ago. Our oldest son was having a party at his apartment where they also have use of the roof. We were invited – unusual for parents! I brought a quadrupled recipe of this along with a rhubarb upside down cake. Both were huge hits!! This potato salad recipe is unusual, surprising and so very tasty. You will love it! This is an adapted version of a Martha Stewart recipe. (Robin – this is for you!)

THE BEST POTATO SALAD – serves 6

3 tablespoons extra-virgin olive oil
4 garlic cloves, thinly sliced
1 1/2 pounds baby Yukon Gold potatoes, scrubbed and halved
3/4 pound cipollini onions, peeled (drop in boiling water for 1-2 minutes to make this easier)
1/8 teaspoon red-pepper flakes
1 cup homemade or store-bought low-sodium chicken stock
Coarse salt and freshly ground pepper
1 tablespoon plus 1 teaspoon white-wine vinegar
1/2 cup picholine olives, pitted (2 1/2 ounces)
1 small fennel bulb, very thinly sliced (use a mandoline)
1/2 cup fresh flat-leaf parsley
1 ounce Parmesan cheese, shaved (1 cup)

Heat a medium skillet over medium-low heat with oil. Add garlic, and slowly saute for 8 – 10 minutes, stirring frequently. Turn heat to medium-high and add potatoes, onions, and red-pepper flakes. Cook until onions are golden, about 7 minutes.

Add stock, and season with salt and pepper. Bring to a simmer, cover, and cook until potatoes and onions are tender, about 10 minutes. Remove potatoes and onions with a slotted spoon. Reserve 1/2 cup cooking liquid.

Combine reserved liquid, vinegar, 1/2 teaspoon salt, and pepper. Pour over warm potatoes and onions. You must do this while the potatoes are still warm to ensure maximum flavor. Stir in olives, and let cool completely.

Add fennel and parsley, and combine. Season with salt and pepper. Top with Parmesan.

Take a look at my garden after I took off the “winter blankets” yesterday. My mint, oregano, sage and chives went wild!
