A great bean dip

We all need something to eat during cocktail hour, whether your cocktail is wine or a martini. I don’t want it to be fattening or filling, but it needs to be something. I am also a big protein fan. My body, as I was told by one doctor, needs a lot of protein, so I made up this clean tasting, protein-laden dip, with vegetables as the dipping device. This is great for any party, particularly New Year’s Eve!

MARY’S BEAN DIP

One 16 oz can of cannellini beans, drained, rinsed and drained
2 – 3 rounded tbs. hot horseradish, with juice drained, let your taste decide amount
3 tbs. olive oil
1/2 head of roasted garlic
1/2 of a lemon squeezed – add gradually and taste
1 tsp. ground cumin
Salt and fresh ground pepper to taste
3 tbs. chopped fresh parsley
Olive oil to drizzle on top
Cumin powder to sprinkle on top

Heat oven to 375 degrees. Take one head of garlic and slice the whole thing in half, horizontally. Place on aluminum foil, drizzle with olive oil, salt and pepper. Close up the two halves on top of one another and make a tight closed packet with the foil. Roast for 45 minutes to one hour until the garlic is soft and brown. (You can use the other half for many things – add to mashed potatoes, vegetables, anything!)

Place beans, horseradish, olive oil and squeeze 1/2 head of the garlic cloves into the bowl of a food processor and process until chunky. Add half of lemon juice, salt, pepper, and cumin and process again and taste. Add more lemon if you like and process until a nice smooth consistency. Use more olive oil if you need to, to make it smooth. Add the parsley at the very end and pulse just once or twice. You just want the parsley distributed throughout the dip. Alternatively, you can fold it in by hand.

Place in a bowl to serve, drizzle on more olive oil and sprinkle some more cumin on top.

Serve with fresh fennel, celery, red pepper, endive spears or any other fresh dipping vegetables you like.

We’ve gotten lots of responses to “what’s your favorite spice?” What came back? Mint, rosemary, cinnamon, curry, saffron and cumin. Cumin was hands down the winner, receiving the most votes.

Cumin is so versatile. You can use the plain seeds, toasted seeds or the seeds finely ground into a powder. I love to sprinkle ground cumin on cauliflower before roasting it. When sprinkled on store-bought hummus, with a little drizzle of olive oil, that hummus perks right up. People will think it’s homemade, but it’s just adding a little love to a store bought brand! Cumin works on pork, yummy on grilled skirt or hanger steak and chicken. I have never tried it on fish but you know, I think it’d be great on roasted tilapia fillets. One reader wrote that her husband even sprinkles it on his eggs and omelets! Recently I made a steamed rice recipe with cumin, mustard seeds and butternut squash and it was heavenly! I love the smell of it roasting and steaming. I’ll have to share that recipe later.

Our lovely Project Manager, Caitlin, told me about the favorite Mother Goose nursery rhyme that her parents rewrote for her and her 3 sisters, because they were all girls. (I LOVED hearing this story coming from a family of five boys and me!) Here it is.

And put it in the oven for baby and me!

Spicy Chicken Chili for a Snowy Football Weekend!

Spicy chicken chili

Tomorrow, we are entertaining for the big Giants game. I thought this chili would be perfect to serve with all the garnishes and hot cornbread, plus a big tossed salad.

What can be better than to make a big pot of chili on a beautiful snowy Saturday with a fire going in the fireplace? NOTHING!

This is a favorite recipe of mine, adapted from a very old Food and Wine Magazine. It gives you the big chili flavor and isn’t nearly as heavy as it’s made with chicken. It has a melody of spices and heat from the jalapeños. If you don’t like so much heat, remove the seeds, but I like to keep them in. I also like to use Greek oregano which is much more potent and grind cumin seeds for the cumin powder. Again, more powerful flavor.

SPICY CHICKEN CHILI
-serves 4

2 tablespoons olive oil
1 onion, chopped
3 large cloves garlic, minced
1 pound skinless boneless chicken thighs (about 4), cut into thin strips, all fat removed
4 teaspoons chili powder
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon salt
1 jalapeño pepper, chopped fine with seeds
1 28 oz. can of whole San Marzano tomatoes, hand crushed, with their juice
2 1/2 cups canned low-sodium chicken broth or homemade stock
1 15.5 oz can of drained and rinsed pinto beans
1 15.5 oz.can of drained and rinsed black beans
1/2 teaspoon fresh-ground black pepper

For garnish:

Minced sweet onion
Grated sharp cheddar cheese
Sour cream
Cilantro leaves
Sliced pickled jalapeños

Serve on top of a few tortilla chips or steamed rice

Serve with warm cornbread

In a large saucepan, heat the oil over moderately low heat. Add the onion and garlic; cook, covered, until they soften, about 20 minutes.

Increase the heat to moderate and stir in the chicken strips. Cook until they are no longer pink, about 2 minutes. Stir in the chili powder, cumin, oregano, and salt. Add the jalapeños, the tomatoes with their juice, and the broth. Bring to a boil, reduce the heat, cover, and simmer for 15 minutes.

Uncover the saucepan and stir in the beans and black pepper. Simmer until the chili is thickened, about 15 minutes or even longer. Serve topped with the onions, sour cream, cheddar cheese or more jalapeños. It is nice to give your guests a choice. Top all with cilantro leaves.

Wedges of corn bread are always a good complement to chili. Or serve the chili over steamed rice or a few tortilla chips.

Indian Spiced Roast Beets!

This recipe is really different and so good. I love roasted beets on a salad with goat cheese and toasted walnuts. And then we have a family Polish dish of lightly pickled beets with horseradish that is wonderful with Polish sausage, eggs and homemade bread, but then after that, what do you do with beets besides roasting with olive oil, salt and pepper? Well here is just the recipe. It is really different and really delicious. It is a Melissa Clark recipe, Indian Spiced Roast Beets, from the New York Times that I have altered. I hope you like it as much as we did. Serve with LOVE and enjoy!

INDIAN SPICED ROAST BEETS
Serves 4

1 3/4 pounds beets; a mix of red, and golden
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher or French grey salt, more to taste
Pepper, to taste
1/2 teaspoon brown mustard seeds
1/2 teaspoon coriander seeds
1/2 teaspoon cumin seeds
1 fat garlic clove, minced
1/3 cup sour cream
1/2 jalapeño pepper, finely chopped with seeds
1 teaspoon grated fresh ginger
1 teaspoon lime juice, more to taste
2 tablespoons chopped fresh cilantro or parsley

Heat the oven to 375 degrees. Peel the beets and cut into 1-inch chunks. Toss with the oil and season with 1/4 teaspoon salt and pepper. Roast for 30 minutes, tossing occasionally, then sprinkle with mustard seeds, coriander and cumin and roast until the beets are tender, about 15 minutes more.

While the beets roast, prepare the dressing: using the side of a knife or mortar and pestle, mash the garlic with a pinch of salt until it forms a paste. Place sour cream in a bowl; whisk in garlic paste, jalapeño, ginger, 1/4 teaspoon salt and lime juice. Whisk in the cilantro or parsley.

Scrape the warm beets into a large bowl. Stir in the dressing. Taste and adjust seasonings if necessary.

Roasted cauliflower with cumin and tomatoes in a green bowl.I have been oven-roasting cauliflower with olive oil, salt, pepper and cumin for some time now and it is delicious. But sometimes you need a change. So I am always on the lookout for quick cooking, delicious vegetables to get on the table fast for a weeknight meal. I look at weeknight meals as it’s okay to spend a little time on the main dish but then the vegetable and carbohydrate should be simple and easy. Like rice in a rice cooker while oven roasting asparagus with olive oil and finishing with lemon juice and lemon zest, plus a little more olive oil. So this week, I had a prospective client dinner meeting on Wednesday and my husband cooked for himself and Zach. I had asked him to please use up the plum tomatoes as they were getting too ripe. He forgot. So I’m looking at these soon overripe tomatoes as I’m preparing my cauliflower and say why not? It was great, adding an additional flavor along with some juiciness and color – so important!

ROASTED CAULIFLOWER WITH CUMIN & TOMATOES
Serves 4

1 head of cauliflower
2 – 3 tbs. olive oil
Salt
Pepper
1 tbs. ground cumin
3 plum tomatoes, quartered lengthwise, then cut into 4 or 5 chunks.

Preheat oven to 400 degrees.

Wash, dry and separate or cut flowerets of the cauliflower to be approximately the same uniform size. Pile in the middle of a rimmed baking sheet. Drizzle on 2 – 3 tbs. olive oil, sprinkle with salt, fresh pepper and cumin. Pile on chopped tomatoes and toss the whole thing well with a spatula/flipper/pancake turner.

Roast on a top shelf for 20 minutes or more until cauliflower is fork tender. Toss again when testing.
