Roasted Sea Bass on a Radicchio Salad with Sugar Snap Peas & Apple

With my mother-in-law’s passing, the inevitable clean up and division of “stuff” is happening. My husband and oldest son went back down to Baltimore this past week to pitch in and help Steve’s sister with the work of emptying her condo. Needing to leave early on Wednesday morning, our son came to our apartment to spend the night on Tuesday. Steve and I had several business networking events that evening so he offered to cook dinner.

Well we arrived home to a DINNER!!! A gourmet dinner and combination – this Roasted Sea Bass on a Radicchio Salad with Sugar Snap Peas & Apple – that I would have never thought of. He is fearless, creative and brilliant in his cooking and combinations. He is, I think, a better cook than me. Okay. That. Was. Hard. To say.

I had some sea bass fillets in the fridge and he found a head of radicchio, a bunch of herbs – parsley, cilantro, mint and dill,  part of a jalapeño, some sugar snap peas and a Jazz apple. He made a beautiful salad of the radicchio, thinly sliced apple, a little fresh jalapeño, par boiled sugar snap peas and herbs with a lemon, olive oil, mustard, and worcestershire sauce dressing and the fish was marinating in a lemon, olive oil, herb mixture. He felt my refrigerator needed cleaning out so he went to work using things up.

When would I dream my son would chastise me on the condition of my vegetable drawers?

Never.

But it’s all good! And, he was right.

So the fish fillets, with the herb marinade piled on top, roasted in 425 degree oven for close to 20 minutes. Did you ever notice that sea bass fillets really expand and puff up in thickness, so the roasting takes longer than you would expect?

But then he did something unexpected, because he wanted the herbs to be crispy. When finished roasting, he flash broiled the fillets and got those herbs to have a nice crunch! I wouldn’t have thought of that. And, he served the fish on top of a big pile of the salad. Total delish!! And beautiful!

Frosty cocktails and dinner salads, summertime is here, right? Easy cooking and meals that come together quickly, that’s what we all want when it’s time to open the windows wide, as we’d really rather be outside.

My mother-in-law passed early Tuesday morning. We had the funeral in Baltimore on Thursday. She had lived a good long 96+ years. So on Wednesday night, our oldest son and his fiancée came over for dinner and spent the night so we could all drive to Baltimore together. Obviously I had not planned for four for dinner this week but here’s what I threw together. It was great for a hot summer, late night meal.

Fortunately I had defrosted a package of 4 chicken thighs with bone and skin. I had some baby spinach and romaine lettuce, potatoes, mini sweet peppers, radishes and tomatoes. I threw in some caperberries and lemon halves to roast with the potatoes and chicken. Over the finished salad, I drizzled a tiny bit of olive oil and with a squeeze of the roasted lemons – DELISH!!

The caperberries got crunchy – a nice and interesting little bit of salt crunch every once in a while. The potatoes, baby Yukon Gold, were creamy dreamy. And roasting the lemons at the high heat of 425 degrees made them almost sweet! You can just salt and pepper your chicken on both sides but I was also trying out a new possible product for the summer box, delicious and high in garlic content, so I will tell you to just add some garlic powder and sesame seeds on the thighs, in order to not ruin the surprise of this product in the upcoming summer box.

Here’s what I did.

DINNER SALAD WITH ROASTED CHICKEN THIGHS, CAPERBERRIES AND ROASTED LEMONS – serves 4

4 chicken thighs with bone and skin 
Salt
Pepper
Garlic powder
Sesame seeds
5.5 oz. baby spinach leaves
3 – 4 romaine lettuce leaves, washed, dried and torn into bite size pieces
1.75 lbs. baby Yukon Gold potatoes – scrubbed, dried and cut into 2“ chunks
2 Tbs. olive oil, plus more to drizzle on finished salads
1/3 cup caperberries, drained
2 whole lemons, washed, dried and cut in half
8 radishes, scrubbed clean and dried, trim if greens are not nice
½ cup sugar snap peas, washed, strings removed, and cut on a diagonal into slices
3 tomatoes, washed, dried and each cut into 8 wedges
4 small sweet peppers – yellow, orange or red, washed, dried, split in half lengthwise, seeds removed
3 scallions, cleaned and sliced, white, light green and some dark green parts
Maldon salt
Fresh ground pepper

Preheat oven to 425 degrees. Toss potatoes with 2 Tbs. olive oil and season with salt and pepper. Roast potatoes in the oven for 15 minutes. Then add the caperberries to the potatoes and toss and return to the oven for 20 – 30 minutes more.

Meanwhile, wash and dry chicken thighs, removing all fat and extra skin on the edges. Season both sides with salt, pepper, garlic powder and sesame seeds, pressing them in to adhere. Place thighs on a rack on a rimmed baking sheet, add lemon halves in the corners of the baking sheet, cut side down and roast on the top shelf in the oven for  30 – 40 minutes.

Prepare all the other vegetables.

Distribute the spinach and romaine lettuce leaves evenly among four dinner plates. Place chicken thighs in the center and evenly distribute all the other vegetables around the chicken, putting one roasted lemon half on each plate and finishing with the scallions sprinkled all over. Drizzle olive oil on the vegetables in a circle around the chicken, and squeeze the lemon all around. Finish with some crushed Maldon salt and fresh ground pepper.

Serve with LOVE and enjoy!! We paired this with an Alsace Riesling – perfect! (Steve – what do you think?)

Barbecued Ribs or Santorini Grilled Chicken?

BBQ ribs – perfect for this holiday weekend. Those are fiddlehead ferns garnishing the platter – they’re in season now!

If you’re thinking of ribs for today or tomorrow, I’ve got you covered with my great rib recipe here. People rave about this recipe and it’s so simple and easy. Or if pork is not your thing, how about a Santorini Grilled Chicken recipe that’s sure to please everyone as it’s stuffed with tomatoes, cheese and onions and oregano. And I’ve added on for you some salads too – one tomato and two potato. So fire up the grill, whip up the salads and enjoy this lovely long weekend with your family – and don’t forget to thank our fallen heroes for their service to our country, as that is what Memorial Day is all about. These recipes are all reprise recipes so I’ll just show you the pictures, which all link back to the original post.

We are all out of sorts today. My mother-in-law is passing. She is 96 years old, almost 97, in August. She lived a good long life. I’ve dealt with a lot of passing of people close to me. My mom passed in 1995, my dad in ’98 (of a broken heart from losing my mom. He always thought he would go first.), and then we lost a brother to MS in 2000. All of these were sudden events and a surprise. This, with Steve’s mom is maddening. His sister is in Baltimore with her and has called in hospice. We are both on pins and needles.

Today I spent an hour tearing through the house looking for my reading glasses and then I went to wash my hands in the bathroom and looked up in the mirror – there they were on my chest – hanging from my necklace. Hope this isn’t a sign of things to come! Once I left my car keys at a greeting card store and then they closed and I couldn’t drive home! I was so engrossed in reading funny cards and laughing so hard, I got comfortable, sat on the carpeted floor and left my keys there too. That was a tough one to retrace. Then there was the time I left my keys in the freezer. Don’t ask.

Love your family more. Our time here is precious. Cook with abandon and always serve with LOVE!

Kale & Farro Salad with Spicy Butternut Squash, Broccoli, Radishes & Cashews

Kale and farro salad with spicy butternut squash, broccoli, radishes and cashews in two white bowls.There are so many snack boxes out there — Graze, Love With Food, Snack Nation and Nature Box to name a few. I went to a food conference last Saturday called Founder Made, where numerous new food product founders participated. A lot of discussion was had about how millennials eat, much of it revolving around snacking. And Graze was there touting their “healthy” snacks. 

Well I’m here to tell you that while their snacks may not be fried potato chips – they are “healthier” than that – but they are high in calories and sugar just the same. And if you eat three well-balanced meals, you should have no need to snack at all. Come on – one of their snacks was pecan pie pecans – that’s full of sugar and super fattening! That is not a healthy snack.  

So the millennials will be overweight and even more detrimental, not understand the value of eating right, balanced meals in the first place. This is like the “low fat” craze of the 80’s – total hogwash!

So what we aim to do with MARY’s secret ingredients is to introduce you to new healthy products that will easily turn a ho-hum ordinary meal into a special gourmet “company” meal. We want to show you how to create fantastic dishes, super easily, with the new healthy products we have curated for you. It belongs to life, and it is your responsibility to take care of it. You cannot afford to do anything that injures your body, because the body is the instrument you need for selfless action. That is the fine print of the trust agreement: when we smoke, when we overeat, when we don’t get enough exercise, we are violating the terms of the trust.

If you want to live life at its fullest, you will want to do everything possible to keep your body in vibrant health in order to give back to life a little of what it has given you.

So on to my recipe of this Kale & Farro Salad with Spicy Butternut Squash, Broccoli, Radishes & Cashews, which was super delicious!

I always think of butternut squash as a winter vegetable so I want to tell you about this dish I made up the other night before spring really gets here, even though it should be here already. All of us on the East coast are still wearing scarves and winter coats. It’s crazy!

This was totally yummy with a lot of ying and yang – cool and hot, spicy and not, crispy and soft textures – a beautiful symphony of flavors and a very satisfying vegetarian dish. Make it tonight – with LOVE – and all will be right in the world.

Kale and farro salad with spicy butternut squash, broccoli, radishes and cashews in one white bowl.KALE & FARRO SALAD WITH SPICY BUTTERNUT SQUASH, BROCCOLI, RADISHES & CASHEWS – serves 4

4 oz. chopped kale leaves
1 cup farro, cooked
1 small butternut squash, cut in generous ½” squares
1 large onion, cut in ½” squares
2 Tbs. coconut oil
3 Tbs. spice rub* (recipe below – also great for pulled pork)
1 bunch of organic broccoli
1/3 cup chopped roasted, salted cashews
4 thinly sliced radishes
Olive oil for drizzling
2 wedges of lemon

Preheat oven to 425 degrees.

*SPICE RUB RECIPE:

1½ Tbs. sweet paprika
½ Tbs. garlic powder
½ Tbs. brown sugar
½ Tbs. dry mustard (Coleman’s)
1½ Tbs. coarse sea salt

Mix the paprika, garlic power, brown sugar, dry mustard, and salt together in a small bowl. 

This makes more than you need and is also great to rub on a pork butt to make pulled pork. Double it if you’d like to have some extra on hand. Keep in a tightly closed container

Combine the squash and onions with the coconut oil and spice mix on a rimmed baking sheet. Toss all to combine and roast in the oven for 35 – 40 minutes until tender. Toss at the halfway point, at about the 20 minute mark.

Meanwhile, cover the farro with about 3 inches of cold water. Salt with a little coarse sea salt and bring to a boil. Reduce to a simmer and cook for about 30 – 40 minutes. Taste test with a fork for tenderness. It should be a bit chewy. Strain in a fine mesh colander when done.

Wash all the kale in a lettuce spinner, removing any large stems. Spread on a clean counter to air dry, then chill in a paper towel lined plastic bag in the refrigerator.

Wash and peel stems of the broccoli. Cut each stem into 4 or 5 smaller stems and steam for about 10 minutes, until bright green and crisp tender. When done, remove the steamer of broccoli from the pot so it can air dry a bit.

Wash and trim the radishes. Using a hand mandolin, slice into very thin slices.

Coarsely chop the cashews.

Everything should be done all around the same time, so now you’re ready to assemble!

Line low flat bowls with the kale leaves. Place ¼ of the cooked farro in the middle, with the kale forming a ridge around the edge. Place a scoop of the butternut squash on top of the farro.

Chop the steamed broccoli into 2” lengths, leaving the flowerets intact and place them around the edge of the farro. Tuck in sliced radishes in four places around the bowl as shown.

Place chopped cashews on top of the squash. Drizzle some olive oil on the kale edge of the bowl, and follow that with a squeeze of lemon juice around that same kale edge.

Serve with LOVE, a Vouvray and enjoy!!!

Perfect Salad of Endive, Blood Oranges & Golden Beets for your Sweetheart

Perfect Salad of Endive, Blood Oranges and Golden Beets.We are ensconced in upstate New York where the temperature is -9 degrees. No joke. And that’s not the wind chill number, which I am afraid to even know. I had a duck breast that needed to be cooked yesterday, so I made a special dinner last night and I will make one again tonight to celebrate Valentine’s Day! It is way too cold to venture out. Much better to just snuggle in at home. So last night, I made this Perfect Salad (as my husband called it) of Endive, Blood Oranges & Golden Beets. It was refreshing, delicious and different. A crisp way to start a meal so I wanted to share this with you – make it tonight for your sweetheart!

It is simple and quick to make – except for roasting the beets takes some time. I love blood oranges. They remind me of a past romantic trip to Italy many years ago. Steve remarked that although these blood oranges were good, they are better in Italy. Maybe that was the romance part?

Sliced duck breast, farro, snow peas and shiitake mushrooms on a dinner plate.

Dinner was followed by a duck breast seasoned with Chinese Five Spice and star anise and topped with a special ingredient that may go in the next MARY’s secret ingredients box (it’s amazing!), farro and snow peas sautéed with shiitake mushrooms.

Tonight I’m making a Caesar salad, roast beef, baked potato and lemon roasted asparagus. A real traditional dinner Steve will also love.

What’s on your menu?

PERFECT SALAD OF ENDIVE, BLOOD ORANGES & GOLDEN BEETS – serves 2

1 Belgian endive, trimmed and separated into leaves
2 blood oranges
3 small to medium-sized golden beets – roasted (roast extra for another day!)
1 heaping Tbs. finely minced shallot
1 Tbs. red wine vinegar
2 Tbs. olive oil + 2 tsp. for the beets
Salt
Pepper

Preheat oven to 375 degrees. Scrub the beets and dry with paper toweling. Place beets on a sheet of aluminum foil, drizzle on 2 teaspoons of olive oil, season with Kosher salt and fresh ground pepper. Close foil up to make a neat sealed packet. Place packet in a baking dish and roast in the oven for an hour. Check for tenderness carefully as steam will blast out of the aluminum foil. A skewer should pierce each beet easily when done. Let cool and then peel and quarter each beet.

Trim, wash and pat dry each endive leave.

Wash oranges. Slice off the top and bottom so the orange will stand up flat on the cutting board. Then slice off all the peel and pith, top to bottom, following the curve of the orange with your knife. Slice each orange horizontally into 4 or 5 slices. Remove any white center part.

Combine the shallots with the vinegar in a small bowl. Gradually whisk in the olive oil and season to taste with salt and pepper.

Arrange the endive in a fan shape at the top of the plate, then fan out the blood oranges and then the quartered beets at the bottom. Drizzle the vinaigrette over all. Serve right away with LOVE.

Roasted Squash and Radicchio Salad With Buttermilk Dressing & Sweet Corn Arepas

You know I love salads for dinner and since it is the season for squash, I wanted to share this recipe with you! It may sound a little bit time consuming, but it’s not. Perfect for a meatless weeknight meal, particularly after all the rich holiday food.

I love delicata squash because the skin is truly delicate enough so that you don’t have to go through the time consuming step of peeling it and you can eat it. It’s probably like potato skins and has more nutrients than the actual squash part. Don’t quote me on that, I’m just guessing.

This recipe is from Melissa Clark at The New York Times. I like a lot of her recipes as we seem to have the same likes. But at first when I read this recipe, I was not too keen on the buttermilk in the dressing as I’m usually just an oil and vinegar kind of gal. But, I went ahead and followed hers exactly (this is rare) and this was delicious!! Not at all creamy like a ranch dressing, which is what I was afraid of, just the right amount of creaminess to work oh so nicely with squash and greens.

Roasted Squash and Radicchio Salad With Buttermilk Dressing & sweet corn arepas.

Try this, this coming week. I served this with Delicias Andinas sweet corn arepas, toasted of course and gluten-free – so satisfying, different and delicious!!! 

ROASTED SQUASH AND RADICCHIO SALAD WITH BUTTERMILK DRESSING – by Melissa Clark – serves 4

2 delicata squashes (10 ounces each), halved lengthwise, seeded and cut into 1/2-inch half-moons
1 Tbs. honey
1 ½ tsp. kosher salt
¼ tsp. smoky chile powder, such as New Mexico or chipotle
6 Tbs. extra-virgin olive oil
⅓ cup buttermilk
2 tsp. lemon juice
2 tsp. finely chopped tarragon
1 large garlic clove, grated
1 head radicchio, cored and shredded (4 cups)
4 cups arugula
⅔ cup chopped toasted pecans (see note)
⅓ cup thinly sliced scallions

Toast pecans first by heating oven to 350 degrees. Spread nuts on a rimmed baking sheet and toast until they deepen in color and turn fragrant, 7 to 10 minutes. Cool before chopping.

Raise heat in oven to 425 degrees. In a large bowl, toss squash with honey, 3/4 teaspoon salt, chile powder and 2 tablespoons olive oil. Transfer to a large rimmed baking sheet. Roast, tossing occasionally, until tender and golden brown, 35 to 40 minutes.

Meanwhile, in a small bowl, whisk together buttermilk, lemon juice, tarragon, remaining 3/4 teaspoon salt and the garlic. Whisk in remaining 4 tablespoons (1/4 cup) oil.

In a large bowl, combine radicchio, arugula, squash, pecans and scallions. Toss in buttermilk dressing; taste and adjust seasoning as necessary.

Roast leg of mutton, cooked medium-rare.

So I know I’ve told you about how our two boys cook. They actually do most of the cooking in their partnerships. Both girls are great bakers, fearless with yeast, all breads and desserts. This is such a great thing as a mom of boys because we are always in conversations about food!! They text me their dinner photos all the time. Here’s Zach from Warsaw showing me his farmer’s market roast leg of mutton, perfectly cooked, I might add!! I’ve never had mutton – have you? So cool that he can be so far away, yet we can still be a very big part of their daily lives. This is what happens when you make great home cooked food a central theme.
